We're a week away from February!  Last week I share a chart for last frost dates for each Zone. 
Was it accurate for your zone?  Below are suggestions for seed-starting in February by region.  You might be
Seed Starting Indoors if it's cold outside.
February Seed Starting by Region


GULF COAST 
Arugula, Asparagus, Beans, Beets, Broccoli, Cabbage, Carrots, Celery, Swiss Chard, Corn, Cucumber, Eggplant, Endive, Fennel, Kale, Leeks, Lettuce, Melons, Onions, Peas, Peppers, Potatoes, Radish, Radicchio, Scallions, Sorrel, Spinach, Tomatoes, Turnips and Watermelon. HERBS and Wildflowers!

SOUTHWEST 
Sow Indoors: Chard, Eggplant, Peppers, Scallions, Tomatoes, Basil and Chives. 
Sow Outdoors: Asparagus, Beets, Pak Choy, Broccoli, Cabbage, Carrot, Swiss Chard, Lettuce, Peas, Potatoes, Radish, Rutabaga, Spinach, Cilantro, Dill, Fennel, Oregano, Parsley, Sage, Tarragon and Thyme.
Don't forget the Wildflowers!

PACIFIC NORTHWEST
Sow Indoors:  Artichoke, Asparagus, Broccoli, Cabbage, Cauliflower, Celery, Chard, Fava Bean, Kale, Leek, Lettuce, Onion, Peas, Radicchio, Spinach and HERBS! 
 

SOUTHERN INTERIOR 
Sow Indoors: Broccoli, Celery, Swiss Chard, Eggplant, Endive, Fennel, Kale, Leek, Lettuce, Onions, Pak Choy, Peppers, Radicchio, Scallions, Tomatoes and Basil 
Sow Outdoors: Arugula, Beets, Carrots, Asparagus, Collards, Endive, Lettuce, Pak Choy, Parsnips, Peas, Potatoes, Radish, Radicchio, Sorrel, Spinach, Turnips, Chives, Cilantro, Dill, Parsley and Wildflowers!

CENTRAL MIDWEST 
Sow Indoors: Asparagus, Broccoli, Cabbage, Celery, Kale, Leek, Lettuce, Onion, Radicchio, Chives, Fennel, Parsley, Oregano, Sage, Tarragon and Thyme

NORTH CENTRAL ROCKIES
Sow Indoors: Asparagus, Cabbage, Celery, Endive, Kale, Leek, Lettuce, Onion, Radicchio, Scallion, Spinach, Chives, Parsley, Rosemary, Sage, Tarragon and Thyme.

MID-ATLANTIC 
Sow Indoors: Arugula, Asparagus, Broccoli, Cabbage, Celery, Swiss Chard, Eggplant, Endive, Kale, Leek, Lettuce, Onions, Peppers, radicchio, Spinach, Turnips, Chives, Oregano, Parsley, Rosemary, Sage and Thyme.

MARITIME CANADA & NEW ENGLAND
March is the first month to sow indoors.

I've already planted kale, carrots, beets and radishes in my community garden plot. The kale seeds have germinated. I live in Dallas where we go from 75 one day to 20 the next. I spend a lot of time covering my bed and then uncovering - LOL.
